Carrot and Brazil Nut Cookies

  • Ingredients

    • 1/2 cup grated carrot
    • 1/2 cup oat flour
    • 1/2 cup almond flour
    • 2 tablespoons Brazil nut oil
    • 3 tablespoons demerara sugar
    • 1 tablespoon sweet cassava starch
    • 5 chopped Brazil nuts
    • 2 tablespoons of water (if necessary)

    Mix all ingredients until a homogeneous dough forms.

    Form into balls and place on a baking tray with baking paper.

    Bake in a preheated oven at 200°C for around 10 minutes.
